Term Definition
lactase
An enzyme that splits the milk sugar lactose into its components glucose and galactose.
lactose
A double sugar (disaccharide) in milk.
lipids
General description for fats and oils. See Fats.
lutein
An antioxidant found in spinach and silverbeet.
lycopene
An important carotenoid found almost exclusively in tomatoes and tomato products. A powerful anti-oxidant, several studies have linked lycopene to lower rates of cancer of the prostate, pancreas and stomach.
