History has left no clue as to the identity of the "Betty" who first layered breadcrumbs and apples to create this dessert.
Apple filling:
4 large green cooking apples (about 800g)
2-3 cloves
2-3 tablespoons sugar
4 tablespoons water
Topping:
2 cups soft fresh wholemeal breadcrumbs (allow 10 slices)
1 teaspoon cinnamon
grated rind of 1 lemon (about 1 teaspoon)
½ cup brown sugar, firmly-packed
1. Peel and core apples and cut into chunks. Place in a saucepan with the cinnamon, sugar and water. Simmer gently for 10 minutes or until apple is cooked and soft.
2. Mix together breadcrumbs, cinnamon, lemon rind and sugar. Sprinkle one-third of this mixture on the bottom of a lightly-greased 20cm square or round baking dish.
3. Spread half the apple mixture over, sprinkle with another one-third of the breadcrumb mixture and then add remaining apples. Top with remaining breadcrumbs.
4. Bake in a moderately hot over for 25-30 minutes until golden brown.
