Banana bran muffins

Got some bananas that are too-ripe?  Don't throw them out. Mash and use to whip up these easy muffins.

Ingredients

1 cup bran breakfast cereal (eg All-Bran)
1 cup low-fat milk
1 egg, lightly beaten
2 tablespoons brown sugar
1 large ripe banana
2 tablespoons soft margarine or sterol spread *
1¼ cup self-raising flour
¼ teaspoon cinnamon

* Sterol spread is a special soft margarine to help lower your cholesterol by blocking cholesterol absorption. Look for brand names like Logicol or Pro-Activ.

Methods/steps

1. Place cereal in a mixing bowl. Add milk, egg and sugar. Mix to combine. Allow to stand for 10 minutes.


2. Mash banana with margarine. Stir into bran mixture. Add sifted flour and cinnamon. Mix with a wooden spoon until  almost combined.


3. Spoon into a 12-serve large muffin tray which has been sprayed or lightly oiled.


4. Bake in a moderate oven (180 C/350 F) for 20 minutes or until golden brown. 

 

Additional Tips

Variations:
Add 2 tablespoons sultanas with the flour.
Sprinkle with flaked almonds before baking.
