Portuguese chicken pieces

I love this easy chicken recipe from McCormick with lots of paprika and oregano to add antioxidants. Also a good one for a gluten-free diet as pure dried spices have nothing else added (such as thickeners) and so are safe for coeliac disease.

Ingredients

  • 1 kg chicken pieces, trimmed of fat
  • 1 lemon, juice and zest
  • 2 tbsp McCORMICK paprika (Sweet Hungarian Style)
  • ½ tsp McCORMICK oregano leaves
  • 2 tsp fresh garlic, finely chopped
  • 1 tbsp olive oil
  • ½ cup fresh coriander leaves, chopped, to serve
  • 4 cups cooked jasmine rice, to serve
