Apple and apricot strudel

Apple and apricot strudel

A warming yet light dessert that is sure to be a family favourite. Serve with custard, ice cream or a dollop of natural thick yoghurt. An optional addition is to add in a layer of ricotta between the fruit for a creamier result.

We also thought some mixed spice, cinnamon or even some orange zest would be a delicious addition...needless to say, this is a recipe that can be played around with to suit you! Enjoy.


  • 415g can halved apricots, drained (approx 250g apricots drained)
  • 2 green apples, peeled, cored and diced
  • 2 Tblsp brown sugar
  • 1/4 cup (40g) sultanas
  • 2 Tblsp pistachios, toasted
  • 7 sheets filo pastry
  • Cooking oil spray
  • Icing sugar, for dusting


1. Preheat oven to 200C. Line a baking tray with baking paper.

2. Pat apricots dry with paper towel and coarsely chop. Combine with apple, sugar, sultanas and pistachios.

3. Lightly spray a sheet of filo with oil. Top with second sheet. Repeat with 4 more sheets. Transfer to prepared tray. Place apple mixture at one long end approximately 10 cm from the long edge. Carefully roll to enclose filling. Lightly spray with oil and bake for 30 minutes until apples are cooked and pastry is golden.

4. Serve dusted with icing sugar.
